Barbecue Judge Certification

1 Saturday:  June 3; times TBA

Instructor:  TBA

Location:  Murray Room, Regional Special Events Center

Seriously. Sponsored by the Regional Special Events Center, this class certifies the participant as a barbeque judge under the Kansas City Barbeque Society (KCBS) guidelines.  A Certified Barbeque Judge (CBJ) is a person who likes barbecue, and who is serious about excellence in judging barbeque.  The KCBS Judge Certification Program is designed to train barbecue judges in basic objective standards for judging barbeque meat in KCBS sanctioned cooking contests.  It does not mean that KCBS tells you how to score, but rather that you understand the scoring system.

The program is part lecture, and part hands-on.  The four basic KCBS categories (Chicken, Ribs, Pork & Brisket) are reviewed, along with characteristics of those properly barbequed items.  The KCBS scoring system is discussed by judging criteria—Appearance, Taste & Tenderness.  Then the fun begins.  The student becomes a judge in a simulated contest.  The meat is tasted and scored, critiqued within that judging table, and finally critiqued with the whole class.  The judging process is repeated until all four KCBS categories have been judged.  A lively Q & A session wraps up the session.

The CBJ Instructor will explain the benefits of KCBS membership, how to submit for specific contest judging opportunities, how to become a Certified Master Judge, what the cooking teams go through to compete, and much, much more.  $75 non-KCBS members (includes class materials and one-year membership into the Kansas City Barbeque Society);  $50 KCBS members  How To Register
